Royal Spice is more than a restaurant. It is a quiet promise — that Indian food, given time and reverence, can move you.

A family kitchen, grown up
In 1998, three sisters opened a 12-seat kitchen off Colaba causeway. Their only rule: cook the way their grandmother did — slowly, with whole spices, and no shortcuts. A quarter century later, that rule still runs the pass.
Today Royal Spice welcomes 40,000 guests a year across a candle-lit room designed by Studio Lotus, but nothing on the plate has been hurried.

The Chef
Vikram Patel
Executive Chef · 18 years at Royal Spice
Trained under two Michelin-starred chefs in London and Dubai, Vikram returned home in 2006 with a single ambition — to plate the food of his childhood with the precision of the great European kitchens. His signature dum biryani is, in his own words, "the only recipe I never write down."
